A Plum Pop Cocktail is a sweet tart cocktail, that sings of summer. Keep it fun and use seasonal plums in your next cocktail.
Plums are one of those fruits that are a bit confusing to me. I always love the color, that dark purple with light flecks is satisfying, but are they sweet or are they tart?  I think it depends on how ripe they are and the variety.  I have to say because the plums are always housed right next to the peaches, the flashy, sweet and juicy peach always seems to win out over the more modest plum.
I am trying to be more cognizant of the pretty purple plum and make sure I bring a few home each week. Â Oddly, Plums are relatives of the peach and the nectarine and even the almond. Â Who knew?
Of course plums are healthy, but because of that purple flesh they are really loaded with a ton of health benefits and very few calories, so they are a good snack on the go, not as messy as the peach.
With my little basket of plums sitting around, I wanted to try them in a cocktail. I knew I wanted it to be slushy and a bit tart. The Chambord helps with the tartness, and the plums make for a fresh satisfying cool cocktail. You can switch to vodka if you prefer. Â This is a super easy and fresh cocktail to whip up and enjoy all summer long.
Plum Pop Cocktail
Ingredients
- 1 fresh plum pitted
- 1/2 juice from fresh lime
- 1/2 ounce Chambord
- 2 ounce Gin
- Splash of Sprite or 7 up
- 1/4 cup fresh ice
Instructions
- Add plum, lime juice and ice to blender. Puree until crushed
- Add Chambord and Gin and blend to stir.
- Pour into tall glass and top with a splash of Sprite
- Top with Plum wedge (optional)
