I have started my garden.

Well, I have been pulling weeds, prepping the soil and fixing any damage.  Not really planting a whole lot just yet.I always love this time of year in the garden more than any other.  The weather is usually cool and the bugs haven’t started to bite yet.

I get to head to the garden center and pick seeds galore to plant up.  BIG confession here, I tend to buy WAY more seeds than one girl could ever grow in her garden to feed her family.

With all that time in the garden, besides getting some dirty hands, I got myself a big appetite.  I usually come in from the garden, thirsty, dirty and hungry.

Grabbing a drink is easy, but when you are dirty and tired you want something quick to eat, that is filling and healthy.

Thanks to Jonhsonville Flame Grilled Fresh off the grill flavor chicken I was able to make these super cute and delicious Southwestern Chicken Wonton Cups.

What is super great about these Southwestern Chicken Wonton Cups is that they are just as perfect for party appetizers as they are for the kids as a healthy snack when they get home from school or hungry gardeners when they are tired and dirty from their day in the yard.

Johnsonville Flame Grilled Chicken packets are really rather genius. The chicken is made free of fillers, MSG, artificial preservatives, flavors or colors and all chicken breast and each breast is individually wrapped.  That means if you only need one breast for lunch, you only open one breast and the other two stay individually wrapped and fresh until you are ready to use them. GENIUS!

These are perfect for a quick healthy dinner, or if you want to make a delicious easy snack for you and the kids.

You can find all five varieties in the refrigerated meat section at your grocery stores nationwide.

Southwestern Chicken Wonton Cups

Ingredients
  • 18 wonton wrappers
  • 1 9-ounce Johnsonville Flame Grilled Southwestern seasoned Chicken Breast
  • 3/4 cup shredded Mexican cheese {more to your taste}
  • 1 green onions, thinly sliced
  • 1 tablespoon cilantro, chopped {optional}
  • Drizzle of hot sauce
  • (optional additional ingredients: chopped green chiles, black beans, chopped fresh cilantro, diced avocado)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Press wonton wrappers into the cups of a mini muffin pan to form “cups”, being sure that the edges to not fold in. Bake for 7 minutes, then remove.
  3. Remove chicken portions from wrapper and cut into 1/2″ squares.
  4. Divide chicken evenly throughout the wonton cups. Top with a pinch of shredded cheese.
  5. Then bake for an additional 5-7 minutes, or until the cheese is melted and the chicken is heated through. Remove and garnish with sliced green onions and cilantro
