Yellow Cupcake with Real Strawberry Butter Frosting is a delicious moist cake with a decadent fresh strawberry flavored frosting.
Sadly the strawberries are all finished producing in my garden. I have to say most strawberries make it into the house, because I tend to eat them as I pick.
However, I had just enough left to make this unbelievable frosting. For me this cupcake is all about the frosting, which is good enough that you may want to eat it all by itself. I wouldn’t judge you if you did! Cause you wouldn’t judge me right? We’re friends like that.

Yellow Cupcake with Real Strawberry Butter Frosting is a delicious moist cake with a decadent fresh strawberry flavored frosting.
Servings: 12 cupcakes
Ingredients
Cupcake Ingredients:
- 1 1/2 cup gluten free baking flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter room temperature (8 tablespoons)
- 1 cup granulated sugar
- 1 large egg room temperature
- 2 egg yolks room temperature
- 1 1/2 teaspoon vanilla extract
- 1/2 cup sour cream or yogurt I used light sour cream
Frosting Ingredients:
- 1 cup of fresh strawberries caps cut and removed
- 1 cup of unsalted butter room temperature (16 tablespoon)
- 1 teaspoon vanilla extract
- 2 1/2 cup confectioners sugar sifted
Instructions
Cupcake Directions:
- Preheat oven to 350 degrees.
- Line 12 cup cupcake tin with liner and spray with baking spray. Set aside.
- Add butter to mixing bowl and whip. Add sugar and combine.
- Add egg, egg yolk, and vanilla extract and mix to combine.
- Add 1/2 of flour mix, combine.
- Add 1/4 cup of sour cream, combine
- Add remaining flour mix and then remaining sour cream.
- Blend until just combined.
- Place 1/4 cup of mix in each cup.
- Bake for 22-25 minutes.
- Remove from oven and cool on wire rack. When you can handle remove from pan and continue to cook on rack.
Frosting Directions:
- Place strawberries in blender and puree.
- Add strawberries to small saucepan and on medium heat, cook and stir for 20 minutes or until condensed in half. Allow to cool (I stuck pan in refrigerator)
- In an electric mixer, whip butter until fluffy.
- While mixer is running on low add 1 cup of confectioners sugar, vanilla and 2 tablespoon of puree.
- Add an additional 1 cup of confectioners sugar and 2 tablespoon puree.
- Add 1/2 cup of confectioners sugar and remaining puree. (1-2 tablespoon)
- Stick frosting in refrigerator to firm up
- When cupcakes are completely cooled pipe frosting generously on top of each cake.
- Can be stored in refrigerator for several days
Notes
Store these devils in the refrigerator.
