25 Minute Garlic Mashed Potatoes
Ingredients
- 4 pounds of red potatoes quartered
- 1/2 cup Finlandia black garlic cheese spread
- 1/2 cup milk
- 1 1/4 teaspoon kosher salt
- 1 tablespoon bunch of fresh parsley chopped {about 1 }
- 1 tablespoon minced fresh thyme {no stem}
Instructions

Place potatoes and garlic in a Dutch oven; add water to cover. Bring to a boil and cook, uncovered for 15 minutes or until potatoes are tender.

Drain; return potatoes to pan. Mash potatoes till chunky consistency.

Stir in cheese, milk, salt, and fresh herbs.

Serve and enjoy.

I know some people are traditionalist and don’t like the skin in their mashed potatoes. I think they give it great color in this recipe and added fiber!
