Perfect Egg Salad is a delicious and simple recipe that is packed with protein and easy and quick to prepare. Â Making the perfect lunch or mid day snack.
Growing up I was an extremely picky eater and there were only a handful of recipes my Mom could make that I would actually eat. Â One was my Mom’s egg salad. Â Mom would toast up a couple of slices of Wonder bread, yep Wonder bread and heap a huge pile of egg salad in between the toast. Â I was a skinny thing {oh back in the day} and she was probably trying to get as many calories in my mouth when I would sit long enough to eat. Â I would gobble up those sandwiches as fast as I could, usually eating so fast I would get a stomach ache.
I find it amazing how food brings back very specific memories back to me, where I was when I ate it how I felt. Â I can close my eyes and be back in a memory all because of how the food made me feel.
When my hubby asked me if I would make some egg salad, you know who I called, Mom. Â When I asked she didn’t have to look it up because she doesn’t have it written down, she just goes from memory. Â The way most family recipes are remembered.

Perfect Egg Salad
Ingredients
- 6 hard boiled eggs {read how here}
- 3 tablespoons of mayo or 3 tablespoons of greek yogurt
- 1 teaspoon yellow mustard
- 1/2 teaspoon salt
- 1/4 teaspoon of pepper
- 1/2 teaspoon celery seed
- 1/4 teaspoon honey or sugar
- few sprinkles of sweet paprika
- Romaine lettuce leaves or whole grain bread
Instructions
- Cube eggs and add all the ingredients to a medium bowl. Gently stir to coat ingredients evenly.
- Serve on toast or on lettuce.
