A healthy alternative to takeout this Broiled Shrimp and Broccoli with Cashew Sauce.  This recipe is the perfect weeknight recipe, ready in 15 minutes,  super easy to prepare and has a great nutty, spicy creamy sauce to serve on top or alongside the perfectly broiled Broccoli and Shrimp.

This is one of those dishes that originated in one of our favorite restaurants and made it’s way to our at-home dinner table.

It’s one that is so good, you figure out what that special thing is that makes it so craveable {definitely the cashew sauce} and it becomes part of your family foodie vernacular.

I know we have all ordered Chinese takeout a time or two.  We start craving our favorite dish and we pick up the phone and soon the doorbell rings and the brown paper back is handed over to us, complete with grease stains, and we can’t wait to dive into what is within our white Chinese takeout box.

Then…. we feel like maybe that wasn’t the best choice for dinner.  Chinese food contains a lot of flavor but it also can contain a lot of fat and sodium.

I decided to take one of our favorite takeout recipes, lighten it up, in a simple healthy one baking sheet kind of way.  I love this recipe for its outstanding flavor, but I also love it because it is so darn simple to prepare.

Broiled Shrimp and Broccoli with Cashew Sauce

A healthy alternative to takeout this Broiled Shrimp and Broccoli with Cashew Sauce. This recipe is the perfect weeknight recipe, ready in 15 minutes, super easy to prepare and has a great nutty, spicy creamy sauce to serve on top or alongside the perfectly broiled Broccoli and Shrimp.
Ingredients
  • 3 Tbs. cashew butter
  • 2 Tbs. reduced-sodium soy sauce
  • 1-1/2 tsp. maple syrup or honey
  • 1-1/2 tsp. Asian sesame oil
  • 1-1/2 tsp. Sriracha; more to taste
  • 1-1/2 tsp. plain rice vinegar
  • 1-1/2 tsp. freshly squeezed lime juice
  • 1-1/4 lb. extra-large shrimp(26 to 30 per lb.), peeled and deveined
  • 1 lb. 1-inch broccoli florets(about 4 cups)
  • 1 Tbs. olive oil
  • Kosher salt and freshly ground black pepper
Instructions
  1. Position a rack about 6 inches from the broiler element and heat the broiler on high. Line a large rimmed sheet pan with parchement paper
  2. In a medium bowl, whisk the cashew butter, soy sauce, maple syrup, sesame oil, Sriracha, vinegar, lime juice, and 2 Tbs. warm water until smooth. Set aside half of the sauce for serving and toss the shrimp with the remaining sauce.
  3. On the prepared pan, toss the broccoli with the olive oil and season with salt and pepper. Arrange in a single layer and broil until lightly browned on the edges, about 3 minutes, keeping a close eye on the pan and tossing occasionally to prevent burning.
  4. Arrange the shrimp on and around the broccoli, spreading it out evenly. Return the pan to the oven and broil until the broccoli is charred on the edges and the shrimp are just cooked through, 3 to 5 minutes more.
  5. Serve the shrimp and broccoli with the reserved peanut sauce on the side for dipping.

    As much as I love takeout Chinese food, a dish like this (lightened up and virtually guilt-free) is even more appealing. Love the sound of that cashew sauce!

      Hi Vicki. I highly recommend trying cashew butter if you can- such good stuff! But, yes peanut butter will work fine as a substitute.

    Going to make us tonight… Don’t like the broiler… Can I just roast the broccoli at about 400° and when it’s almost done, throw the shrimp in? Thanks!
