Happy Tuesday, can you believe it is already the end of May?  I have been getting into the vegetable garden and planting away, I am always so zealous with my planting in the spring, ending up with an abundance of lettuce, beets and radishes.  Really you can only give away so many beets and radishes before your friends see you with a plastic bag with green leaves sticking out the top and the start running away from you.  Even still, I keep planting more and more, a bit of an addiction.

I like to spend some time in the garden first thing in the morning, it is so peaceful.  Then I am usually off to the gym  by 9 a.m.  Because I eat breakfast early I am a bit of a hungry beast after my workouts.  Actually I am usually a hungry beast during my workouts, so when I get home I want something quick and easy to pull together that is packed with healthy protein.  One workout while I was hungry I started thinking about this amazing crab cake I had, and how good one would taste right then.  On the way home I thought up this Crab Avocado Dip Recipe, which is so much more healthy and simple to make.

This yummy dip has only 3 ingredients, and is oh my goodness so delicious.  I topped several Triscuit crakers with the dip to enjoy in one bite munches.  The avocado in the dip is loaded with potassium {even more than a banana} which helps with muscle recovery.  Crab is a great source of Omega-3’s, and protein.  The Triscuit crackers add a bit of crunch and are a great source of whole grain making them more than your average cracker.  Suggested serving size is two topped crackers per person.

Ingredients
  • (6) ounce package crab meat, patted dry with paper towel
  • 1 avocado, peeled and mashed
  • 1/4 cup finely grated good quality parmesan cheese.
  • 4 Triscuit Original Crackers
Instructions
  1. Stir together ingredients in a small bowl.
  2. Top Triscuit crackers with a spoon full and enjoy!
