The first day of summer is right around the corner along with Father’s Day. Oh good lord, Father’s Day, I am always at a loss. Even though my hubby is not my father, I feel the man gave me two of the most precious things in my life, so I should give him a gift to say “hey thanks”. But let me just say the man is the WORST person to buy for, you can ask his children and pretty much anyone who has ever had to buy him a gift. He will give you to hints, he just says “I will let you know what I want” up until the day the gift giving needs to take place, which means you buy him something he really doesn’t want. Any ideas you guys can throw my way would be GREATLY appreciated, probably more by me than him, but GREATLY appreciated none the less.
I love the beginning of summer because of the explosion of fresh local produce that becomes available.
I always enjoy when I show up at the market and I am greeted with baskets of fresh local peaches. You can actually smell their peachy smell as you walk by, they are just that fresh.
Really is there anything better than the smell of fresh grown peaches? I always feel a little guilty eating a summer peache because they are so luxuriously sweet, it seems like I am being a glutton, but they are really so good for you, so I munch on.
Since you know I am a peach lover, you know I bought a big ol’ basket of peaches and I have been finding all kinds of ways to use them in my recipes. One way was in this Peach Bourbon Thyme Smash Cocktail. Don’t be fooled by this cocktails pretty face, cause yes it is pretty, but it is also delicious with a kick.
I really enjoy creating summer fresh cocktails, mixing and matching to come up with something delightful to drink and easy to make. This cocktail will soon become a favorite to enjoy throughout the summer with family and friends, preferably by the water if you can.
What is your favorite fruit to enjoy in a cocktail?
- 2 oz. Bourbon
- 1 oz. Lemon juice
- 1 oz. Jalapeno Simple syrup or plain simple syrup
- 1 Ripe peach
- Fresh Ice
- 2 Sprigs fresh thyme, one stripped of leaves
- [br][b]Jalapeno Simple Syrup[/b]
- For the jalapeño simple syrup:
- ½ cup sugar
- ½ cup water
- ½ of a fresh jalapeno, sliced in half
- In a martini shaker add bourbon, lemon juice and simple syrup. Cut peach in half remove pit and squeeze smashing the peach in your hand over the martini shaker. Any peach pieces that fall in is fine.
- Add leaves from fresh thyme
- Shake vigorously to infuse ingredients.
- Fill a low ball glass with fresh ice and pour in bourbon mix.
- Garnish with fresh thyme and a peach wedge {optional}
- In a small saucepan combine the sugar, water and jalapeño.
- Bring to a simmer while smashing the jalapeño with a wooden spoon to extract the flavor.
- Once it boils, remove from heat and let cool completely.
- Remove jalapeño and transfer to a container and chill in the fridge until ready to use.
- For regular simple syrup omit jalapeño
