Turkey Chorizo Sliders are the perfect grilled burger with a bit of spicy and tons of juicy flavor.  Perfect for a weeknight dinner or for enjoying while tailgating or watching the game.  Ready in less than 20 minutes.  Enjoy topped with homemade spicy cilantro mayonnaise.

Football season is here!  That means tailgating with friends, eating and drinking great food, and playing corn hole.   You know what corn hole is, right?  It’s not just a Cincinnati thing is it?

Whether you are tailgating or enjoying the game from your couch you will need a great slider recipe to help you cheer your team to victory.  This is a bold flavored slider, that is healthy and lean.  Topped with a homemade spicy mayonnaide.  While you will feel like you are being bad eating this burger, you couldn’t be more wrong.  The burger is made with lean turkey and chorizo sausage.   A little spice and a lot of flavor.

Turkey Chorizo Sliders

Turkey Chorizo Sliders are the perfect grilled burger with a bit of spicy and tons of juicy flavor. Perfect for a weeknight dinner or for enjoying while tailgating or watching the game. Ready in less than 20 minutes. Enjoy topped with homemade spicy cilantro mayonnaise.
Ingredients
  • [br][b]Homemade Mayonnaise:[/b]
  • 1 egg yolk
  • 1 tablespoon Dijon Mustard
  • 1 large lemon, juiced {4 teaspoons}
  • 1/2 teaspoon salt
  • 1 cup of olive oil
  • 1 jalapeno trimmed and seeded, cut into chunks {leave seeds if you want mayo spicy}
  • 1/4 cup bunch of fresh cilantro
  • [br][b]Sliders:[/b]
  • 1 pound ground turkey
  • 1 pound ground chorizo
  • Pinch of slat
  • Pinch of ground black pepper
  • 12 Whole Wheat Dinner Rolls
  • [br][b]Toppings:[/b]
  • Tomato slices
  • Lettuce pieces
  • Jalapeno, sliced
Instructions
[br][b]Homemade Mayonnaise:[/b]
  1. In a blender add egg yolk, dijon mustard, lemon juice, and salt.
  2. Start blender. Through tube slowly in a very small stream {very small stream} add about 2 tablespoons of olive oil at a time. Let blender run and then continue adding olive a little at a tie and VERY slowly. This can take up to 8 minutes.
  3. When your mayonnaise has come together, add jalapeno and cilantro and blend.
  4. You can store this in the refrigerator in an airtight container for up to 1 week.
Sliders:
  1. In a large bowl add turkey, chorizo, salt and pepper. Using hands mash together.
  2. Form into 2 1/2″-3″ patties.
  3. Set aside.
  4. Heat grill to medium high heat.
  5. Add burgers, close grill and cook 4-5 minutes, flip and cook an additional 4-5 minutes.
  6. Lower heat to low and cook for 4-5 minutes more depending on the thickness of burger. You want internal temperature to be 165°
  7. Remove from grill, place on bun and top with desired toppings and dollop of homemade mayonnaise.
  8. Serve and Enjoy
