Are you planning on seeing the new release that comes out this weekend? Will you stand in line to get tickets sit in a theater where every seat is taken and be one of the first to see the much-anticipated move?
Or will you be like me and wait a week or two and then go and see the movie?
I have seen every Star Wars movie when they came out, yes I am that old, and I have loved them all. My hopes are high that this one will pacify the Star Wars geek in me. What is great is both of my boys, my oldest especially are Star Wars fans, probably because when the Episodes I, II, and III came out I made sure that both boys saw the movies, read the books and of course had the toys for them to play with.
I have to tell you that I have made this Farro Beef Mushroom Asparagus Marinara recipe several times over the last few months, tweaking it to make it easier to prepare, and a bit healthier each time. Using the highest quality ingredients, that were the cleanest and offered the most nutritional value. It is a great balanced macro recipe, low calorie, high protein recipe.
BUT what is most important is it really is DELICIOUS! It is really EASY to prepare and because you only use two pans super easy to clean up. Making it the perfect healthy family weeknight dinner. Even my picky eater told me he loved it, and let me tell you that is a huge stamp of approval.
If you are wondering what the heck is Farro? It is an ancient grain derived from wheat. It is a healthy nutty-tasting grain that is a high fiber, protein, magnesium and iron food. Farro goes back to the Roman empire, it actually got the nickname “pharaoh’s wheat” since it was popular in Egypt before spreading to Italy.
This grain is a very hearty with a chewy taste which makes it perfect paired with roasted vegetables, ground beef, and marinara.

I sprinkled this dish with Nutritional Yeast. If you haven’t heard of Nutritional Yeast you soon will. It is soon to become the “it” food. It is a great addition to many recipes that you would enjoy parmesan cheese such as soups, and salads or dishes with marinara, such as this one. It is a complete source of protein, folate, vitamin B and it has a nutty cheesy taste which makes it a great substitute for cheese in many dishes.

Farro with Beef Mushroom Asparagus and Spinach
Ingredients
- 2 tablespoons coconut oil or olive oil
- 1 bundle of asparagus trimmed
- 8 ounces wild mushrooms sliced
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1 shallot minced
- 1 cup Farro rinsed
- 1/4 cup white wine
- 3 cups low sodium chicken stock
- 1 pound oranic grass fed ground beef
- 16 ounces marinara
- 1/4 cup Nutritional Yeast optional
Instructions
- Preheat oven to 450 degrees.
- Line a small rimmed baking sheet place mushrooms on one end and asparagus on the other and sprinkle evenly with 1 tablespoon melted coconut oil, red pepper flakes, and kosher salt, black pepper. Set aside.
- Place a large heavy skillet {I used cast iron} over medium heat add 1 tablespoon of coconut oil when melted and shallot, cook stirring 3-4 minutes until tender.
- Add rinsed Farro and stir to coat and starts to toast 1-2 minutes.
- Add white wine cook for 3-5 minutes, until wine starts to reduce.
- Add stock and bring to a rapid boil, then reduce to a high simmer, just a bubble or two along edges of the pan. Stirring occasionally for about 15 minutes.
- Meanwhile place mushroom and asparagus in oven and roast for 20-22 minutes. Cooking until tender but not soft and mushy.
- Toss ground beef into the farro mix, breaking up and allowing beef to brown, this should take 5-7 minutes. Once ground beef is browned pour in marinara, stir to combine.
- Toss roasted mushrooms and asparagus in the farro stirring to combine.
- Sprinkle Nutritional yeast over Farro and serve.
