We’ve all heard people say that a proper breakfast is the most important meal of the day.
“Proper” of course is dependent upon your goals, but I’m going to take a fitness tack here and assume that your goals are, in no particular order, feeling your best and looking your best. Sound about right? These are in fact my goals as well.
Starting your day off with a good dose of protein helps to jump-start your metabolism and these Gluten Free Chocolate Protein Pancakes have that good dose of protein. They are also low in sugar, and that combination of low sugar and high protein helps to keep your blood sugar low. According to a new study published in he American Journal of Clinical Nutrition people who enjoy breakfasts high in protein are less likely to consume foods high in fat or sugar later in the evening.
Choosing wholesome ingredients that have that high protein low sugar content helps you to reach your health and fitness goals. Almond Flour, siggi’s yogurt, and unsweetened almond milk are all high protein low sugar ingredients. Making simple swaps in your recipes and daily choices can be small change for your lifestyle.
I chose to use siggi’s yogurt in this recipe because siggi’s Icelandic-style strained yogurt is made with simple ingredients and not a lot of sugar, in fact, every container of siggi’s yogurt contains more protein than sugar. siggi’s products do not contain any artificial preservatives, thickeners, sweeteners, flavors or colors and is made with milk from cows not treated with rGBH. You can use siggi’s plain yogurt or siggi’s coconut flavor which adds another layer of great flavor.
The key to making these pancakes crispy and fluffy is to coat your pan with a bit of butter or coconut oil to help crisp your cakes and help flipping and removing them. Also, cook them over medium high heat, if your pan gets too hot your pancakes will spread and cook too quickly.
Gluten Free Chocolate Protein Pancakes
Ingredients
Pancakes:
- 1 banana
- 2 egg whites
- 1/4 cup Siggi's plain or coconut yogurt
- 2/3 cup unsweetened almond milk or coconut milk
- 1/4 teaspoon sea salt
- 1/4 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 2 tablespoons cocoa powder
- 1 teaspoon flax seed meal
- 1 teaspoon baking powder
- 1 scoop chocolate low sugar whey protein powder
- 2/3 cup almond flour
- 1/4 cup enjoy life chocolate chips optional
Toppings:
- fresh berries and pure maple syrup - optional garnish
Instructions
- Mash banana, add the rest of the ingredients and mix well. Cook like regular pancakes over medium-low heat coating pan with butter or coconut oil.
- Top with desired toppings – strawberries, maple syrup, bananas, nut butter
