Gluten Free Yellow Banana Cake is a little bit of sweet heaven. The moist gluten-free yellow cake with fresh banana flavor topped with a classic white frosting makes the perfect dessert cake or decadent breakfast cake.
Some you may know that I did the Whole30 diet last summer. If you are unfamiliar with the whole30 diet, it is a way of eating where you remove certain food groups (like sugar, grains, dairy and legumes) because it could be having a negative impact on your health and fitness without you even realizing it. When I finished the 30 days and I added gluten back into my diet I realized that it affected me in a negative way. A tickle in my throat, causing me to constantly do a throat clearing, a bit of bloating, and I would get tired in the middle of the day. You get the idea, it was not making my body happy and I needed to try to keep gluten from my diet.
I love my baked goods so I had to come up with a way to do my baking gluten-free. Now Pillsbury has made it even easier for us.
Of course if Mama the head cook removes gluten from her diet, her brood will be removing it too. Well if they are eating at the dinner table they are, anyway.
What I love about Pillsbury gluten-free baking products is they are really easy for all of us to use, especially those that may be new to baking or just new in the kitchen. They are also the perfect way to quickly whip up a dessert during the busy, busy week.
Since I am such a huge banana fan and I love adding potassium to the families diet, I added a bit of mashed banana to a box of Pillsbury Yellow Cake mix along with organic egg, butter and cinnamon. Simple and quick, but a great fun cake to enjoy after dinner or as we did for Sunday brunch. It was perfect because I baked off the cake on Saturday and after we all did our Sunday workout, we met back in the kitchen for coffee and a big slice of this gluten-free banana yellow cake. I topped my cake with a bit of creamy white Pillsbury frosting, but this cake would be great without it as well.

Gluten Free Yellow Banana Cake
Ingredients
- 1 box yellow cake mix
- 2 ripe bananas mashed
- 3 eggs room temperature
- 1/2 cup unsalted butter softened
- 1/2 teaspoon ground cinnamon
- 1/4 cup of classic white frosting mix {I used Pillsbury premade}
Instructions
- Preheat oven to 350°
- Grease and flour or spray with baking spray a 9" loaf pan, set aside
- In a large mixing bowl or electric mixer, beat butter, eggs and mashed banana together. Once butter is creamed add cinnamon and entire box of yellow cake mix. Whip until blended evenly.
- Pour batter into prepared loaf pan and bake for 50-55 minutes or until cake tester comes out dry. {mine was done in 50 minutes}
- Remove and set on rack to cool.
- When cake is cooled completely top with frosting.
