Orange Popovers are a gluten free, sweet and easy bread for breakfast or brunch. Perfect served with fresh fruit, honey and coffee or tea.
We were in Miami on a family trip and I had a wonderful time during the day hanging on the beach with my family and eating at some pretty fabulous restaurants in the evenings.
One restaurant that we had the pleasure at eating at is BLT and they bring these HUGE cheese popovers out to the table while you are waiting for your entree.
When I tell you they were huge, I mean face size huge {literally the size of my face}, but the thing about popovers is that they are light and airy so they don’t fill you up too much, like regular bread does.
BLT includes the recipe to these epic popovers on a cute little card for patrons to take home with them, and you know I grabbed that bad boy up and couldn’t wait to try the recipe out at home.
Try the recipe I did, but it was loaded with a lot of calories I would like to ditch, so these little orange popovers were born. Though they don’t rise like an average popover because I substituted nut flours to make a healthier choice, they were just as airy as the original and I loved the citrus kick from the orange zest. These were incredible topped with honey and fresh berries! INCREDIBLE! If you are feeling decadent some fresh whipped cream would make these over the top incredible.
Orange Popovers
Servings: 12
Ingredients
- 3 large eggs at room temperature
- 1 tablespoon honey
- 2 teaspoon finely grated orange zest
- 1 1/4 almond milk
- 4 tablespoons unsalted butter melted {divided}
- 1/2 + 1 tablespoon cup almond flour
- 1/2 cup tapioca flour/starch
- 1/4 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 425°.
- In a large bowl, whisk the eggs with the honey and orange zest. Whisk in the milk and 3 tablespoons of the melted butter.
- In another bowl, whisk the flours with the baking powder and salt. Whisk the wet ingredients into the dry ingredients until only small lumps remain.
- Brush the cups of a popover pan or muffin tin (preferably not nonstick) with the remaining 1 tablespoon of melted butter and heat the muffin tin in the oven for 5 minutes; the butter will turn a nutty brown.
- Fill the popover pan or muffin cups halfway with the popover batter.
- Sprinkle coconut sugar over top.
- Bake the popovers for about 30 minutes, until they are risen and browned. Turn the popovers out onto a serving platter and serve them right away.
I love making popovers! They are especially dreamy when orange flavored.

Can I just use only coconut flour in place of this mix of flours?
No Andreia, you need the others, especially the tapioca flour as it gives the mixture the lift while baking.
