SUNDAY FOOTBALL FOOD!
Oh glorious Sunday! Here is how most Sunday’s have been going in our house: In the morning we are off to Funday Sunday at Crossift, which usually entails some cardio smack down where we are all laying on the floor gasping for air at the end. I know I know it sounds horrible, but I promise you it is so satisfying to complete that we all keep showing up every Sunday making it the largest and most popular class offered all week.
Then it is all about watching football. Our beloved Bengals did make it to the playoffs this year and were out before we could even say Who-Dey, but being Bengals fans we are sadly use to this.
Now that Football season is ending thankfully some of my favorite T.V. series are back for their new seasons. Shameless, Episodes, and House of Lies are back and I am lapping up all that disfunction.
Sunday’s are not just about T.V., but about the food.
My husband LOVES chicken wings, the hotter the better. To keep the big guy happy with his football favorites I have been working on coming up with recipes that are clean and healthier but still fun and enjoyable to eat.
These Paleo Buffalo Chicken Nuggets are simple easy to assemble and are done in under 30 minutes. Of course I didn’t tell the ol’ husband that these were a clean version of his favorite, I just plated them up and waited for his reaction.
Which was to eat one after another. He loved them. Then the second test was my youngest son, who enjoyed them as much as his Dad. They were a huge success here, and I am sure your family and friends will love them too. Just make sure you make enough.

I’m making these for the second time, this evening. These are really great. They are very easy to make and I love that they are fully coated in franks! I also like the fact that I didn’t have to use eggs as a binder. Thanks for sharing!!
Thank you so much for letting me know Marissa. We really love this recipe here and I make it several times a month, using a bit more hot sauce on my husbands half. 🙂
Hi Amy, I tried these last night. The flavor was great and the chicken was cooked perfectly, but the breading didn’t crisp at all and it tasted like I’d poured flour on top of the chicken. I’m not a very good cook, any idea what went wrong? I’d love to try them again.
Christine, the breading really doesnt crisp because of the hot sauce mix. Next time use one hand to dip chicken into flour and give chicken a little shake to release any loose flour then transfer chicken piece to your clean hand and dip into hot sauce mix. This prevents the flour from gunking up in the hot sauce mix and getting too much flour on each individual piece of chicken. Let me know if this helps.
These look absolutely wonderful!
Thanks Jaren!
Yum! We love having buffalo wings while watching football. Must make these for the Superbowl!

Thanks Aimee. My husband loves them hot too, so I add more Franks to his batch.
I clicked on this totally not expecting to be able to have it (allergies galore around here), but it looks like we actually can! We can’t do butter, but can do ghee so hopefully that would work.
Oh yea Debra- ghee would be fantastic!
Even though my Broncos didn’t make it to the Super Bowl doesn’t mean I can’t still make all the delicious food! These clean eating chicken nuggets are definitely going to be in the lineup!
