Berry Spinach Coconut Water is a delicious and nutritious way to stay hydrated. Loaded with antioxidants, magnesium, zinc, calcium and iron as well as electrolytes to keep you healthy and replenished.
OMG yesterday was so darn beautiful! Sunny, and 71° freaking degrees. When I went to the gym we did our warm up outside and one of the girls said “it smells like Florida” and the coach said “what smells like Florida?” and a few of us said at the same time “sunshine”. Vitamin D is a wonderful thing.
I spent as much time outside as I could soaking it up and breathing in as much fresh air as my little lungs could handle. I have been fighting a nasty sinus, bronchitis infection and my ENT actually told me the best medicine for what I have {besides antibiotic} is sunshine. Here is hoping I am cured. 🙂
Another way I am trying to get myself out of the winter blue funk is by up-ing my fruit and veggie game.
I started buying coconut juices to enjoy after my workouts, but they are so darn expensive.
So, I figured I would just make my own. Coconut Juice is an organic fresh juice from fruits and vegetables that is blended with coconut water.
My favorite commercial flavor mix is the mixed berry coconut water, and since I had plenty of coconut water leftover from my cans of coconut cream I put them to good use. Adding the coconut water to the fruit and veggie juice, ups my hydration game and replenishes electrolytes which is perfect after a tough workout.
This is a simple blend of fresh or frozen berries, a handful of iron rich fresh organic spinach and coconut water, evenly blended and enjoyed cold. This is best enjoyed the day you make it or refrigerated and enjoyed the next day.

Berry Spinach Coconut Water
Ingredients
- 1/2 cup organic fresh or frozen blueberries
- 1/2 cup organic fresh or frozen strawberries
- 1/2 cup organic fresh or frozen blackberries
- 1 cup of organic fresh spinach
- 1 cup of coconut water from can {water left from coconut cream or you can use plain coconut water}
- Fresh ice if using fresh fruit
Instructions
- In a blender add fruit and spinach. Process until smooth.
- Add coconut water and ice if using.
- Blend and enjoy.
