Buffalo Grilled Shrimp with Blue Cheese Dip is a spicy, savory, oh my god that is good kind of dish. Ready in less than 15 minutes makes it the perfect weeknight dinner, or the OMG I have guests coming over appetizer.
Well full swing means that their are teeny tiny little sprouts popping out of the ground, but hey ya’ gotta start somewhere. One of the first things I can always depend on producing for me early is my herbs. My parsley, cilantro and basil have all got a good start.
Well, that was until I got an invader. Something small and fast has been sneaking into the garden and nibbling away. Now how do I know that it is small and fast you ask?
Because my garden has a fence around the perimeter with chicken wire running the lower portion in hopes to keep out said small nibbling creatures. Now h0w do I know it is fast.. well because the two dogs that live here would of certainly caught said small fast creature if it wasn’t so unbelievably fast. Right… right!
Enough about my garden woes, and on to this rocking good recipe.
This is one of my favorite “oh crap what am I gonna make for dinner” recipes. I always try to keep some frozen shrimp on hand and of course everyone should always have butter and Franks hot sauce on hand.
To thaw frozen shrimp, just toss it into a colander and run water for a few minutes until your shrimp thaw. Yep it is that easy.
This is also a great dish to serve while tailgating or as an appetizer.

Grilled Buffalo-Barbecue Shrimp with Blue Cheese Dip
Ingredients
Blue Cheese Dip:
- 1/2 cup light sour cream
- 1/4 cup crumbled blue cheese
- 2 tablespoons finely chopped scallions {about 2}
- 2 tablespoons finely chopped flat-leaf parsley
- 2 teaspoons fresh lemon juice
Shrimp:
- 14 jumbo shrimp 1 1/2 to 2 pounds, peeled, and deveined
- 1 teaspoon olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 tablespoons unsalted butter melted
- 1/4 cup hot sauce such as Frank’s RedHot
Instructions

Blue Cheese Dip: - Add all ingredients in a small bowl and stir to blend. Set aside.
Shrimp:
- Heat grill or grill pan to medium heat.
- Stir together butter and hot sauce in a large bowl. Set aside.
- Toss shrimp olive oil, kosher salt and black pepper in bowl. Make sure shrimp is evenly coated.
- Grill shrimp, turning once, until just cooked through, 3-4 minutes per side.
- Remove shrimp from grill and directly drop into hot sauce mix.
- Stir shrimp to coat and enjoy.

This is one of those recipes where you go “why didn’t I think of that?!” My daughter loves shrimp (and used to love spice) so I am really curious to see how she would take this recipe. Only one way to find out!
