Cucumber Salad is a cool, light, creamy salad that pays tribute to summer cucumbers and fresh garden dill.
My garden looks like a jungle! Â One I am afraid to enter. Â The lettuce has bolted. Â No this does not mean that it pulled up its lettuce skirts and ran away, but that flowers are growing out of the top of my greens. (this is bad, bad, bad)
You see it rained and then it rained and then it rained and then I got lazy and then it got hot. Â Well, guess what my garden was thrilled with the water and heat and apparently my laziness. Â Which means weeds galore and everybody is bolting. Â That is where this recipe comes to the rescue.
One of many plants that loved that rain and heat was the dill plants. Â Dill was planted many, many moons ago in my garden. Â The thing about Dill is you only plant it once and then it re-seeds itself where ever it likes, which is everywhere. Â I usually don’t mind but his year, well lets just say “do you need some dill?” “please say yes!”
In one of my days walking past my garden trying not to make eye contact with all those weeds, I noticed the dill plant waving to me over the fence and it made me think of the cucumber salad my Mom would make all summer long when I was a little tike.
So, I waved back to the dill and snipped a few branches and headed back to the kitchen to chop and mix and enjoy a summer classic~ the Cucumber Salad.
What is so perfect about this salad is that I use greek yogurt for a bit of protein, and fresh garden cucumbers, onions and of course the dill, which makes a fresh, simple salad. Â Perfect for enjoying all summer and taking to the cookouts you have on the calendar.

Cucumber Salad
Ingredients
- 6 small or 2 large Cucumbers washed and sliced thin {or about 3 cups}
- 1 large Red Onion {or 1 cup} halved and sliced thin
- Pinch of Kosher Salt
- Black Pepper to taste
- 4 tablespoons Sour Cream
- 1 teaspoon honey
- A few splashes red wine Vinegar
- 2 tablespoons Fresh Dill roughly chopped
- 1/4 teaspoon dried red pepper flakes
Instructions
- In a large bowl toss cucumber, red onion, salt, pepper, red pepper flakes.
- In a smaller bowl stir together sour cream, honey and red wine vinegar.
- Toss sour cream mix in with cucumber to coat.
- Top with chopped dill and serve.
