Oh glorious wonderful spring weather, how I love you. It makes everything more enjoyable, and you can tell by the smiles on the faces of everyone I see during the day.
Though Sunday was busy in the morning, with doing those Sunday chores that are made all that more important with the glorious weather, you know like washing the car, mowing the grass, etc. We here in the Stafford household finished out chores and got to invite a few friends over seasons first cook out.
We kept it low-key, everyone brought a dish and we supplied the main course, burgers and I whipped up this batch of brownies. Brownies are the perfect dessert for a party, because really who doesn’t love a good dense brownie?
Thanks to Pillsbury’s line of gluten-free baking products, this is a super easy dessert to pull together, only takes a few minutes and baking time and you will have the perfect brownie for all your guests. I wanted to add my own twist to the classic brownie recipe, so I used walnut oil in place of vegetable oil. Next time I make these I think I will try out Avocado oil which I am sure will taste amazing as well. I also added in some fresh raspberries, directly into the batter and a sprinkle on top, to make them extra pretty. Adding the berries to the batter not only adds flavor but moisture.

Gluten Free Double Chocolate Raspberry Brownies
Ingredients
- 1 box gluten free chocolate fudge brownie mix
- 1 eggs room temperature
- 1/2 cup walnut oil or vegetable oil
- 3 tablespoons water
- 1 cup fresh raspberries divided
Instructions
- Preheat oven to 350°
- Grease and flour or spray with baking spray a 9x9” baking pan.
- In a large bowl mix together brownie mix, egg, oil and water. Stir together until well blended.
- Gently fold in 1/2 cup of berries, pour into prepared pan and then add remaining berries over top, spreading out and gently pushing into batter.
- Bake according to box directions, remove and cool completely before cutting.
Notes
Store for one week covered in the refrigerator.
