Greek Yogurt Peach Cherry Parfait a gluten free, healthy protein packed parfait recipe layered with fresh peach puree, cherries and homemade granola. A great way to start your morning, or as a pick me up after a tough workout or mid day slump.
I am a true believer in the power of positive thinking. What you put out there will come back to you. Also known as Karma baby. If you think positive thoughts, good positive thoughts will fill your heart, life and those around you.
Over the years I’ve taken his philosophy to heart, but it was not always so. I would fall into the trap of listening to those complain around me and I would want to join in and add my complaining “two cents”. I would find myself exhausted after these bitch fests, there is no other word for them, and I never, not once felt better after all my complaining. Just tired and more angry.
Finally I got tired of listening to myself and others complaining, and made a promise to myself to stop when I heard myself start, and also stop those around me. I would change the subject if someone would start complaining, or if necessary cut the conversation short. I eventually had to cut certain people from my life, not because they were bad people, but just as I believe in the power of positive thinking, I also believe in the power of negative thinking, and I would much rather be happy than angry.
It is not an unique process to live your life with the extra intentions of positive thinking, but boy, it sure feels good to know you’re contributing some control to all of those outer forces.
Start your week off with positive thoughts and fill up your heart to help you feel happy and healthy.

Greek Yogurt Peach Cherry Parfait
Ingredients
Homemade Granola
- 1/2 cup oats {gluten free}
- 1/2 cup chopped walnut pieces
- 1/4 cup unseated coconut flakes
- 1 cup of slivered almonds
- 2 tablespoons chia seeds
- 1 teaspoon ground cinnamon
- 2 tablespoon coconut oil melted
- 3 tablespoon pure maple syrup
- 1/4 cup pumpkin seeds
Peach Puree
- 2 firm peaches peeled and seeded
- 1 tablespoon pure maple syrup
Parfait
- 15-18 fresh cherries pitted and cut into 1/8
- Greek Yogurt
- 1 cup of Peach puree
- 1 cup of Greek Yogurt
- 1 cup of Homemade Nut Granola
- 4 mason jars or bowls
Instructions
Homemade Nut Granola:
- Preheat oven 325°
- Line a small baking sheet with foil for easy clean up
- Place oats, walnuts, coconut flakes, almonds, chia seeds and cinnamon in a medium bowl and stir to combine
- Toss in melted coconut oil and maple syrup, stir to coat ingredients evenly.
- Spread on baking sheet and bake for 20 minutes, remove add in pumpkin seeds toss and cook an additional 10 minutes. Do not let granola mix burn.
- Remove and let cool, before storing in an airtight container for up to a week
Peach Puree:
- Add peaches and maple syrup and blend until pureed
Parfait:
- Starting with yogurt fill bottom of jar or serving bowl with 2 tablespoons.
- Add 2 tablespoons of peach puree, then cherries then granola. Repeat until you reach the top and finish with cherries and granola.
- Refrigerate until ready to serve

I don’t really support the whole karma ideal, but there’s definitely something to not letting yourself fall into that negative thoughts and complaining routine. Its so easy to do! I applaud you for your commitment to change and surrounding yourself with what you want to feel. That’s awesome! Just like this parfait. Which could totally be my breakfast daily.
