I almost wonder if I am busier in the summer than I am in the winter? I tend to overestimate the time I have in a day during the summer.
Maybe because I feel like I have a more relaxed schedule or it could just be the longer days and the feeling of more time. Whatever the reason, I seem to have less time for dinner during the week of summer than winter.
I am always working to create recipes that are quick, healthy, and easy to prepare on the grill. This maple mustard grilled chicken has been my dinner life saver more than once over the last month.
It contains ingredients I readily have on hand, takes minutes to prepare and is simple to cook up on the grill.
I chose to use chicken thighs, but this is just as delicious with chicken breasts.
I also used the ClickList pick up curbside option at my local Kroger grocery store.
I mean ordering your groceries on-line is pretty genius!
Talk about a HUGE time saver and quite honestly life saver.
One day last week I knew I had guests coming into town and that I would be so busy I wouldn’t have time to get to the grocery store.
I wanted to make this recipe and I didn’t have chicken at home and I was out of apple cider vinegar, both items that are contained in this recipe.
My friend at the gym had told me she had ordered her groceries from Kroger the week before and was thrilled with the experience. So, I literally logged onto Kroger website, signed in and typed what I needed into the search bar saved to my shopping cart and then told them when I would need to pick it up the next day, BAM I was done.
I did a quick stop at the store on my way home from work and I didn’t even need to leave my car, they brought the groceries out to me. I felt so special… and relieved because it saved me a huge amount of time.
You have to try this I am telling you, you will be hooked it is so easy and it will save you SOOOO much time.
Don’t worry about Kroger not having what you need because you can choose from over 40,000 items available in-store.
They also keep a list of your favorite items, you know the ones you buy consistently so that it is that much EASIER to use.
Okay so enough about how awesome this ClickList thing is and on to WHY YOU WANT TO MAKE THIS MAPLE MUSTARD GRILLED CHICKEN.
It is the perfect weeknight, easy but delicious dinner recipe for the whole family. You can mix and match thighs with breast or do one of the other.
Which ever you choose you are left with a moist, flavorful, high protein, low calorie, low carb, gluten free, dairy free and paleo friendly recipe for the whole family.
Maple Mustard Grilled Chicken
Ingredients
- 1 tablespoon ground mustard
- 3 tablespoons pure maple syrup
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 tablespoon liquid coconut aminos
- ½ teaspoon black pepper
- 1 garlic clove minced
- 1 1/2 pounds boneless skinless chicken thighs or breasts {about 6-8 pieces}
- ¼ teaspoon sea salt
- 1 tablespoon coconut oil {only use if you need to grease grill grate}
Instructions
- Combine the first 7 ingredients in large sealable plastic bag.
- Sprinkle salt and pepper over chicken and add to bag, seal and place in the fridge for 30 minutes or longer. The more time you allow the chicken to marinade the better the flavor will be.
- Preheat grill to medium-high heat.
- Remove chicken from bag and place on the grill or in the skillet to cook. Discard bag and marinade.
- Cook chicken for about 8-10 minutes on both sides or until done.
- Remove chicken and serve immediately.
