Oat Berry Smoothie Bowl is a wholesome filling and satisfying breakfast that is loaded with fresh berries, chia seeds, oats, and pumpkin seeds.
Holy Moly the summer heat came in like a lion here in Cincinnati. Â Geesh has it been hot!
We spent some time this weekend by the pool trying to keep cool and relaxing.  It was nice and quiet which was exactly what I and the hubby needed, just hanging and reconnecting.  Sometimes the simplest times are the best.  Like this awesome Smoothie Bowl, simple and the BEST, my new favorite breakfast.
The first time I saw a smoothie bowl, I really didn’t get it. Â Don’t get me wrong, I get a smoothie, I love my smoothies, but I wasn’t sure I understood the whole bowl thing, why do I need to eat it in a bowl?
That is until I had one. Â They are thick, way too thick to drink. Â You know what I mean, we have all gotten that milkshake that we can’t wait to enjoy and we try to slurp it up through our straw and…. nothing. Â It is just way to thick to use with a straw, so we grab a spoon and spoon away.
That is how I would describe a  smoothie bowl.  Spoon-worthy!  Smoothie bowls are as delicious and nutritious {if not more} as our smoothie, but adding in those oats and chia seeds makes it too thick to drink.
I loved the combination of oats, chia seeds, and fresh berries. Â Topping it off with pumpkin seeds gives you a nutty flavor that was truly delicious! Â You could really enjoy this as a dessert it was so perfectly sweet, cool and delicious.
Oat Berry Smoothie Bowl {gluten free + dairy free}
Ingredients
Oat Mix
- 1/3 cup oats {gluten free}
- 3 Tbsp chia seeds
- 1/4 unsweetened coconut or almond milk
Smoothie Mix
- 1 banana
- 1/2 cup fresh or frozen raspberries
- 1/2 cup fresh or frozen blueberries
- 1/2 cup unsweetened coconut or almond milk
- 1 scoop chocolate protein powder {optional}
- Oat Mix
Toppings:
- 2 Tbsp goji berries
- handful of fresh raspberries
- handful of fresh blackberries
- handful of pumpkin seeds
Instructions
- Place oats, chia seeds and coconut milk in a mason jar, stir or shake to mix. Place in refrigerator over night.
- In the morning, blend all smoothie ingredients together. If using fresh berries add a few ice cubes.
- Pour into a bowl. Add toppings and enjoy!
