This Peach Tomato Caprese Salad is a super simple, summer salad recipe that may become your favorite way to enjoy all those wonderful tomatoes. The sweetness of summer peaches along side of vine ripened tomatoes is a surprisingly wonderful flavor combination.
The hubby and I got the chance to go to San Diego a few weeks ago to attend a wedding. The wedding took place on Coronado island, which I may have fallen in love with while we were there. It is this lovely quaint island that is situated just across the Big Bay from downtown San Diego. It is easy to travel the island by bike, and many residents tote around in glorified golf carts.
I loved the gardens the residents are able to grow, their roses were to die for.
The wedding was an Indian wedding, my first time attending an Indian wedding and I had a great time. After I figured out exactly what I was going to wear, I couldn’t wait to attend the three days of celebration. Each event was spectacular, great food, the dancing, singing and the dresses the ladies wore were incredible. The wedding ceremony took place at 1:00 on the hotel lawn over looking the bay. There wasn’t a cloud in the sky and as we sat and watched the happy couple get wed, sailboats drifted by making one incredible back drop.
We had one night to go out and explore the evening and we headed to a farm to table restaurant that got great reviews. Of course the food…. was amazing!
I ordered their peach tomato salad and as you can see, I was hooked. They served their salad with shaved romano cheese, but I decided to put my twist on the recipe and make it with fresh mozzarella.
WHY YOU WANT TO MAKE THIS PEACH TOMATO CAPRESE SALAD.
This salad screams summer. August is the perfect time to enjoy tomatoes, and peaches, so why not enjoy them together. Slices of red onion give the salad a little bit of zing and the sweet-tangy balsamic vinegar brings all the flavors together.
Peach Tomato Caprese Salad
Ingredients
- 2-3 heirloom tomatoes sliced
- 1/2 cup mix of heirloom grape and cherry tomato
- 2 peaches pitted sliced and slices cut in half
- 1/4 cup of red onion sliced and slices quartered {1/4 medium onion}
- 8-10 small fresh mozzarella cheese balls {the kind that is packed in water}
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 2-3 fresh basil leaves sliced {optional}
Instructions
- On a serving platter place sliced tomatoes.
- Then evenly space onion, grape/cherry tomatoes mix, peaches, and mozzarella over top.
- Sprinkle with salt and pepper
- In a small bowl whisk together extra virgin olive oil and balsamic vinegar.
- Drizzle olive oil mix over top of salad.
- Place basil evenly over top.
- Serve and Enjoy.
