Radish Toast with Fried Egg

Radish Toast with Fried Egg is as simple to make as the title implies. Thinly sliced radishes arranged on buttered toast with a sprinkle of kosher salt and a fried egg to top it. 

It seems too simple, but with its pleasing presentation and the perfect deliciousness you discover after one bite, Radish toast is a brilliant little recipe. 

With its country of origin, France, you know it will be a little bit decadent, and a whole lot delicious!

I thought I would enrich this recipe by topping the crunchy radish slices with a perfectly butter fried egg. 

With just a few small tweaks to the original, I think I have created something equally worthy of your attention.

How to make my Radish Toast with a Fried Egg.

You want to use the highest quality ingredients in this recipe. If you don’t you will be disappointed! 

I highly recommend you use Sourdough bread. For three reasons. 

One, it is hearty and can stand up to an open face sandwich like Radish toast with a Fried Egg. 

Two, it is a low-glycemic-index food. As with other low GI food, sourdough bread will likely cause a gradual increase in blood sugar levels rather than a spike.

Three, the long, slow fermentation associated with sourdough bread has numerous benefits for digestibility.

Toast your bread. Slather it with a good quality (Kerrygold Irish Butter is what I use) butter. 

Sprinkle on some kosher salt.

Thinly slice 2-3 radishes and arrange the radish slices on top of the bread.

You can stop here and enjoy. BUT, if you want a proteins source. You want to fry up an egg to top it off.

How to Fry an Egg.

Use a good heavy skillet, heat it to medium-high heat.

Add about 1 teaspoon of that good quality butter to the skillet, let it melt.

Add your egg, when you see the edges of your egg start to whiten and bubble, top your egg with a bit of kosher salt and black ground pepper.

Once your egg white has whitened, lower your heat to medium and watch your yolk. Once you see a bubble or two form, remove the pan from the heat and slide your egg onto your toast.

Enjoy! You may want to have a side piece of toast to help you mop up any and all egg yolk that will fall onto your plate when you bite into your Toast.

Ingredients

  • 2 slices of good quality Sourdough bread toasted
  • 1 tablespoon of soften good quality butter I used Kerrygold salted Irish butter
  • 2-3 radishes trimmed and thinly sliced
  • Sprinkle of Kosher salt
  • 1 teaspoon of butter
  • 2 eggs preferably farm raised
  • Sprinkle of Kosher Salt
  • Sprinkle of ground black pepper

Toppings, any one of these will do

  • Fresh Parsley leaves torn
  • Fresh Cilantro leaves torn
  • Fresh Dill leaves torn

Instructions

Assemble Radish Toast

  • Toast bread
  • Spread butter end to end on top of bread
  • Layer radish slices evenly
  • Sprinkle with kosher salt
  • Slide cooked egg on top of toast
  • Enjoy
