For the Avocado Toast:

  • Avocado – Make sure it’s ripened, otherwise you won’t be able to mash it.
  • Yogurt – It needs to be unsweetened and plain.
  • Lemon – Reduce the amount by half if you use limes.
  • Sourdough – Pre-sliced store-bought bread is a good alternative.
  • Cayenne pepper – Red pepper flakes work too.
  • Smoked salmon – Lox is great swap.
  • Cucumber – You can also use thinly sliced Persian cucumbers.
  • Microgreens – Add your favorite. Chives and chopped green onions are fine as well.
  • Chili – Feel free to add red Thai chili, jalapeño, or serrano chili.

To Make the Dressing:

  • Lemon – You need the lemon and zest.
  • Tomato – Roma and Heirloom tomatoes are perfect for this if you remove the seeds.
  • Red wine vinegar – White wine vinegar or balsamic vinegar work too.
  • Italian seasoning – Make your own by mixing 2 teaspoons garlic powder, 1/2 teaspoon onion powder, 1 teaspoon paprika, 1/4 teaspoon cayenne pepper, 1/2 teaspoon dried oregano, and 1/2 teaspoon dried thyme.
  • Salt and pepper – I prefer kosher salt and freshly-cracked black pepper.

How To Make Smoked Salmon Toast

  • Make the dressing. Whisk all the dressing ingredients in a bowl until smooth. Set it aside.
  • Mash the avocado. Add the avocado, yogurt, and half of the lemon juice to a bowl. Use a fork to mash everything together until smooth. Season with salt and pepper.
  • Assemble it. Divide the mashed avocado between the bread slices. Sprinkle with cayenne pepper. Add the smoked salmon and cucumber on top. Drizzle with dressing to taste, add the microgreens, and red chili. Serve and enjoy!

Tips & Variations

Feta cheese, eggs, and leftover guacamole with fresh pico de gallo are great ways to change things up.

  • Swap the bread. Slice Jalapeno Cheddar Biscuits in half and assemble your toast with it. You can also use focaccia, ciabatta, baguettes, or any hoagie roll you have laying around.
  • Leave it chunky. Mash half of the avocado. Dice the other half and gently combine them for a bit of texture. Leftover guacamole with pico de gallo is good for this as well.
  • Change the dressing. Pesto, Sriracha, chili oil, tahini, and balsamic reduction are great swaps for the dressing.
  • Add more protein. Slice Hard Boiled Eggs and add them on top. Sunny-side up eggs work too. For plant-based alternatives, add hummus or extra-firm tofu.
  • Give it a Greek twist. Sprinkle the toast with sliced olives, chopped dill, and crumbled feta cheese for some Mediterranean flair.

No. This salmon toast is best the day its made, otherwise the bread would absorb moisture and soften too much. However, you can prep the dressing and mashed avocado up to 2 days in advance.

Ingredients

  • 1 avocado pitted
  • 2 tbsp fat-free yogurt
  • ½ lemon juiced (use the other half of lemon for dressing)
  • 2 slices sourdough toasted
  • A pinch cayenne pepper
  • 2 ounces sliced smoked salmon
  • 1/4 cucumber ribboned with a veggie peeler
  • a handful of microgreens
  • Slices of a small red hot chili

DRESSING

  • ½ lemon zested and juiced
  • 1 small tomato finely diced
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon dried Italian seasoning
  • A pinch of salt and pepper

Instructions

  • Make the dressing by mixing all the ingredients together in a small bowl. Set aside
  • Halve the avocado, remove the stone and scoop the flesh into a bowl.Add the yogurt and lemon juice and mash everything with a fork. Season well with salt and black pepper.
  • Divide the avocado between the toasted bread, sprinkle over a little cayenne pepper and add the smoked salmon and cucumber. Spoon over the dressing, then top with the microgreens, and sliced pepper.
  • Enjoy.
