I am a girl who loves her toast.  I know, I know such a boring food choice to love, but I do.

It was definitely my breakfast of champion when I was in high school and college.  Mostly because I was lazy in high school and broke in college.

Toast has come a long way since back then.  It gets a lot more than a slather of butter or a dollop of peanut butter these days.

These days toast is the chic way to enjoy your fruits and vegetables. Gourmet cheeses spread, mashed avocado, and jams and preserves can be spread to melt and soak into your toast.  Then the number of delicious toppings you can use is endless. Fruit, Vegetables, Nuts and Steak and Shrimp can make your toast into a meal.

Strawberry Mascarpone Mint Toast with a Honey drizzle is sweet, simple and elegant. This is an incredible way to enjoy your morning toast.
Ingredients
  • 1 slice of Pepperidge Farm® Harvest Blends bread, toasted
  • 1 tablespoon mascarpone cheese
  • 2 strawberries, sliced
  • 1 mint leaf, chopped
  • pinch of lemon zest from organic lemon
  • 1 drizzle of honey
Instructions
  1. Spread the mascarpone in a thin layer on toast.
  2. Place strawberry slices in a single layer, overlapping slightly.
  3. Garnish with the freshly chopped mint, a drizzle of honey and the lemon zest.
  4. Serve and enjoy!

      Great way to use that garden mint. I love mint with strawberries, it seems to bring out the sweetness of the strawberries.
