Perfect Egg Salad is a delicious and simple recipe that is packed with protein and easy and quick to prepare.  Making the perfect lunch or mid day snack.

Growing up I was an extremely picky eater and there were only a handful of recipes my Mom could make that I would actually eat.  One was my Mom’s egg salad.  Mom would toast up a couple of slices of Wonder bread, yep Wonder bread and heap a huge pile of egg salad in between the toast.  I was a skinny thing {oh back in the day} and she was probably trying to get as many calories in my mouth when I would sit long enough to eat.  I would gobble up those sandwiches as fast as I could, usually eating so fast I would get a stomach ache.

I find it amazing how food brings back very specific memories back to me, where I was when I ate it how I felt.  I can close my eyes and be back in a memory all because of how the food made me feel.

When my hubby asked me if I would make some egg salad, you know who I called, Mom.   When I asked she didn’t have to look it up because she doesn’t have it written down, she just goes from memory.  The way most family recipes are remembered.

Perfect Egg Salad

Serves: 4-6
Ingredients
  • 6 hard boiled eggs {read how [url href=”http://ahealthylifeforme.com/perfect-hard-boiled-eggs/”]here[/url]}
  • 3 tablespoons of mayo or 3 tablespoons of greek yogurt
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon of pepper
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon honey or sugar
  • few sprinkles of sweet paprika
  • Romaine lettuce leaves or whole grain bread
Instructions
  1. Cube eggs and add all the ingredients to a medium bowl. Gently stir to coat ingredients evenly.
  2. Serve on toast or on lettuce.
