Hello, second week of 2016.  How did your first week of the New Year go?
Mine went pretty darn well. Â Did loads of meal prep last Sunday, so I ate extremely well all last week{I think prepping is the key to eating healthy} and I promised myself I would get in a few trips to the yoga studio, and I did. Â Yay for me! Â Still working on getting more flexible, let’s just say squatting below parallel is a real challenge for me. Â You gotta have goals.
It is amazing how much better I have felt since cleaning up the diet. Â I mean loads of more energy and I have been sleeping better too, whats not to love about a good night sleep? Makes everyone happy, especially those who live with me. Â Just saying.
Where I stumble in my clean little diet is my sweet tooth. Â I like a treat at some point during the day. Â No surprise there if you ever look at the amount of desserts I share here.
I am always trying to create low-calorie desserts that I can eat guilt free and not feel like I am cheating myself or my diet.  This Chocolate Banana Yogurt Parfait may have been a simple little genius of a dessert.  So easy, it is ready in less than 5 minutes, low calorie, high in protein and there is a chocolate sauce.  No guilt chocolate sauce.  Is there anything better?  I think not!
I headed to Walmart and picked up some Yoplait® yogurt.  Thanks to Yoplait® we can stay happy and healthy—without ever sacrificing the taste.  Cause who wants to sacrifice taste? Nobody!
I used Yoplait® Greek 100 Vanilla flavored yogurt in my parfait. Perfect 1 cup size to make an individual size parfait.  I am all about the 1 Up your cup!
If you are not a fan of vanilla, you can use plain flavor greek yogurt and just mix in a bit of honey to add some sweetness. Then make my simple chocolate syrup with cocoa powder and coconut oil.
Then you get to drizzle chocolate all over the yogurt and fresh fruit. Â Booya! Â Who needs a sundae and all those calories, when you can have this healthy creamy, chocolaty treat? Â Keeping it real with the healthy lifestyle!
You gotta try this out, I may have had one of these Friday, Saturday, and Sunday. Â I switched up the fruit and had raspberries and blackberries on Sunday and was just as happy when my spoon hit the bottom of the bowl as I was on Friday and Saturday. Â Use what fresh fruit you have on hand and makes you the happiest. Â Being happy is part of being healthy!

Chocolate Banana Yogurt Parfait
Ingredients
- 1- 5.3 oz. Vanilla Greek Yogurt {I used Yoplait}
- 1 banana sliced into 1/2"
- 1 strawberries hulled and quartered
- 1 tablespoon pistachios coarsely chopped
Chocolate Sauce
- 1 tablespoon cocoa powder
- 1 teaspoon coconut oil
Instructions
- In a small bowl combine cocoa powder and coconut oil, microwave for 15 seconds, remove and stir. If coconut oil is not melted heat for another 10 seconds. Stir to combine.
- In a small bowl drizzle chocolate sauce on bottom and side of bowl.
- Top with half of one yogurt cup. Drizzle more chocolate sauce. Top with remaining yogurt.
- Add several slices of banana, strawberry quarters, sprinkle of pistachio and top with with remaining chocolate sauce.
- Enjoy.

That chocolate sauce… omg, so good!! I think one of these would hit the spot right about now 🙂
My sweet-tooth is my weakness! I saw this on Facebook and had to share because firstly, it looks amazing, and secondly, I am not a big banana fan, but in a dessert/breakfast like this, I would have no problems eating one!
