Cookies and Cream Protein Muffins are a delicious protein packed breakfast muffin. These muffins are made with oat flour, almond flour, cookies and cream whey protein, greek yogurt, and chocolate chips.  They are gluten free, vegetarian, and loaded with protein.

Cookies and Cream Protein Muffins Gluten Free Healthy Protein Packed Recipe | ahealthylifeforme.comI have something to tell you, I suck at squatting.  Are you wondering what the heck I am talking about?  Well you see I use to think I knew how to do a squat and I could do a lot of them.  I actually released a 30 day squat challenge workout here on the blog.

But oh no I have recently found out I suck at squatting, you see I started CrossFit last summer, and in CrossFit there is A LOT of squatting, and not just squatting with your hands all over the place, oh no, they put a barbel with weights in your hand and then tell you to put it over your head and squat.  The horrid movement is called an overhead squat, and I suck at it.  Why?  Because I am not the most mobile person {years of running and spinning will do that} and when you add that weight and ask your body to squat, it sometimes {all the time for me} can’t do what you are asking.

Why am I rambling to you about squatting when all you want to know is how to make these delicious muffins because I am sore!  Yep, sore.  You see I have been doing a lot of mobility squatting to try to improve, and it has left my legs a quivering sore mess.

I always depend on my diet to help me and my sore muscles recover.  Protein powder is a big part of my recovery.  I am loving the Isopure Cookies & Cream Whey Protein Isolate.  It tastes delicious, and I can use it my baking.  These muffins are packed with protein, low carb, low sugar and tons of yummy flavor.  Isopure Whey Protein Isolate comes with glutamine, vitamins, minerals and nutrients to keep your muscles tough, and lean.  Perfect in the morning when you are on the go, or a quick treat after a particularly hard workout, like oh say squatting.

Cookies and Cream Protein Muffins

Cookies and Cream Protein Muffins are a delicious protein packed breakfast muffin. These muffins are made with oat flour, almond flour, cookies and cream whey protein, greek yogurt, and chocolate chips. They are gluten free, vegetarian, and loaded with protein.
Ingredients
  • 1 cup oatmeal flour (gluten free quick oats ground in food processor)
  • ¼ cup almond flour
  • 3 egg whites
  • ½ cup Greek Yogurt
  • 1 cup unsweetened applesauce
  • 2 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 medium banana, peeled and mashed
  • 3 scoops Cookies & Cream Isopure Whey Protein Isolate Powder {1 cup}
  • 1 teaspoon cinnamon
  • 1½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 3/4 cup semi sweet chocolate chips, divided {you can use dark chocolate if you prefer}
Instructions
  1. Preheat oven to 350°.
  2. Place liners in one muffin pan and lightly spray with organic baking spray.
  3. In a large bowl combine egg whites, yogurt, applesauce, honey, vanilla extract and mashed banana.
  4. In a second bowl combine oatmeal flour, almond meal, Cookies & Cream whey protein powder, cinnamon, baking powder, and baking soda.
  5. Combine flour mix and egg mix together until smooth.
  6. Add half of the chocolate chips to the mix and stir.
  7. Fill each tin ¾ of the way full, spreading evenly. {about 1/4 cup}
  8. Place about 4-5 chocolate chips on top spreading evenly over top of each filled muffin batter. Do NOT push down into batter.
  9. Bake for 20-22 minutes. Remove and cool.
  10. Store in the refrigerator.

    Ugh the dreaded squats… I’ve been doing more of them lately and it’s going good but at first it’s terrible. I can never walk down the stairs!! This muffins look like the perfect treat for after some hardcore squats!

    These sound great! I’m a big fan of baking with whey. And squatting… I definitely have a love/hate relationship with squats, but squats and lunges work those glutes the best! 🙂

    Do you have to cook them as muffins or can you bake them in a cake pan and make bars with them?

      Becca, you could make them as a cake. Not positive on baking time, you will have to monitor to make sure the edges of the cake don’t dry out.
