Double Chocolate Coconut Protein Brownies Recipe | ahealthylifeforme.comYou may or may not know that I am on of those crazy CrossFit people.  One thing I have figured out after six months of doing this sport is that I always seem to be sore, sometimes just a bit here or there and sometimes “oh my Lordy I can’t get off the toilet sore.”  You know when you are cursing the fact that you are female and the toilet is so low to the ground.

So, with me sore all the time, I pretty much am obsessed with trying to eat the proper foods that not only help my muscles with recovery but help me keep lean and mean.  Which means lots of protein to help aid in the repair of my muscle fibers but also in replenishing depleted energy stores.

These Double Chocolate Coconut Protein Brownies are not only darkly delicious, loaded with tons of coconut flavor but they have dried cherries in there to give a dose of antioxidants and fiber.  I certainly enjoy a bar and occasionally two after my workout, or when I want something to satisfy my sweet tooth.

Double Chocolate Coconut Protein Brownies

Ingredients
  • 1/4 cup gluten free rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup Whey Chocolate Protein Powder (see notes for additional info)
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup unsweetened applesauce
  • 1 egg
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 2/3 cup Unsweetened Almond Milk
  • 2 tablespoons coconut oil
  • 1/4 cup enjoy life semi-sweet mini chocolate chips, plus 2 tablespoons for topping
  • 1/2 cup dried bing cherries
Instructions
  1. Preheat oven to 350 degrees F. Line an 8×8 inch baking pan with parchment paper.
  2. Place oats in food processor and process for a minute or until they resemble the consistency of flour. Transfer oat flour to medium bowl then whisk in protein powder, shredded coconut and cocoa powder; set aside.
  3. Whisk together applesauce, egg, honey, vanilla and almond milk until smooth and well combined. Add to dry ingredients and mix together until just combined.
  4. Place coconut oil and 1/4 cup of the chocolate chips in glass bowl and microwave for 30 seconds, stir to blend. Microwave an additional 30 seconds until all chocolate chips and coconut oil have melted together. Gently stir into brownie batter.
  5. Stir in cherries.
  6. Pour mixture into prepared pan. Sprinkle remaining 2 tablespoons of chocolate chips. Bake for 18-22 minutes or until just cooked through and the top has set.
  7. Remove from oven and let cool on wire rack.
  8. Lift parchment paper by ends and lift brownies out of pan. Cut and enjoy

    I haven’t worked out in a looooong time, but I totally remember the “why is the toilet so low!!” feeling. You have to push yourself up and curse the whole time. Yup. I remember. haha!
