This simple Green Goddess Dressing is the perfect all around salad dressing, vegetable dipper or cracker spreader. Takes minutes to prepare and lasts up to a week in the refrigerator, letting you make ahead and enjoy over and over.

I don’t know about you but I think the dressing makes the salad.  Really the dressing is one of the main factors determining if a salad is healthy or not.  Dressings can be loaded with unhealthy fats, loads of sugar and more calories than you want to consume in one meal, let alone while eating a salad.

This dressing is made with fresh fruits and veggies that are pressed and squeezed thanks to evolution Fresh Sweet Greens and Lemon Cold pressed juice.

I picked up my bottle when I was in Starbucks ordering a cappuccino.  Once I was home I tossed together some garlic, anchovy, sour cream, olive oil mayonnaise and evolution juice into a blender and a few whirls around the blade I had the perfect all around dressing for the upcoming week.

Using the juice cuts down on having to buy loads of herbs and especially during the cold winter months, when herbs are more expensive and we don’t have a pot growing on the back patio, evolution is a great solution.

Plus evolution is a great healthy choice for all of us, especially in the New Year. Not only are you using great ingredients in the dressing, but you have about 3/4 of a bottle left over to enjoy for the rest of the day.

Why?  Because it is the perfect dressing to take to a party, to throw on a tossed salad, serve to the family during the week, or serve along side of cleaned bite sized veggies to do some dipping.  You can even serve with a cheese tray to spread on crackers or drizzle on whatever you like.

Green Goddess Dressing

Serves: 8
Ingredients
  • 1 whole anchovy
  • 1 small garlic clove
  • 3/4 cup olive oil mayonnaise
  • 3/4 cup sour cream
  • 1/3 cup of evolution cold pressed sweet greens and lemon juice blend
  • OR use
  • 1/2 cup chopped parsley
  • 1/4 cup chopped tarragon
  • 3 Tbsp chopped chives
  • 2 Tbsp lemon juice
Instructions
  1. Put all of the ingredients a blender and blend until you get an evenly smooth dressing, about 1 minute.
  2. Serve as a dip, or toss with salad greens for a dressing.
Notes
Dressing will last covered in the refrigerator for up to 1 week.
