The temperature is now warm enough to get out there and fire up the ol’ grill. I love grilling, for the flavor and how easy it makes clean up. My only problem right now with my grill is that I have a chipmunk who has taken up residence inside. If that isn’t bad enough the two Airedale dogs who live in my house with me are determined to catch the furry critter. I know you are thinking well that is good, they are helping rid you of vermin. You would be right if in their determination they haven’t ripped the grill cover to shreds trying to take it off. Let me just clarify though I have cleaned the grill, fired up the grill, and the dogs have shredded the cover, there is still a chipmunk living in my grill. {sigh}
No worries me and my trusty canines will triumph one day! I hope.
This Cuban Steak with homemade chimichurri sauce is simple to prepare, ready in under 30 minutes and loaded with great spicy flavor. You will love this spice rub and there will be extra left over, which you can store in an airtight container. It is perfect rubbed on sweet potatoes before baking or putting in ground beef after you brown it. The chimichurri sauce can be made ahead of time, and stored in the refrigerator, but will lose a bit of its fresh flavor.

Cuban Steak with Chimichuirri Sauce
Ingredients
Spice Rub:
- 1 tbsp sea salt
- 2 tbsp cumin
- 2 tbsp paprika
- 2 tsp garlic powder
- 1 tsp crushed red pepper
- 2 tbsp Creole seasoning
Chimichuirri Sauce:
- 1 bunch cilantro
- 1 bunch parsley
- 1 dash crushed red pepper
- 3 garlic cloves
- 1 cup avocado oil or olive oil
- Juice of 1 lime
- 1 tbsp apple cider wine vinegar
- 2 tbsp water
Steak:
- 3 lb. round steak
- 1 Vidalia onion peeled and cut into ½-inch rings
- 2 tbsp olive oil
- salt and pepper
- 1/2 bunch cilantro
Instructions
Spice Rub:
- Combine all dry rub ingredients in a mixing bowl.
Chimichuirri Sauce:
- Place all chimichurri ingredients in a blender. Mix until almost smooth.
Steak:
- Remove the steak from the refrigerator a half hour before cooking. Using a sharp knife, slice shallow cuts through the meat. The cuts should be at an angle, in the direction of the grain of the meat as the knife tip is going in. The cuts should be about an inch apart from each other. Turn the steak over and repeat the cuts on the other side.
- Preheat the grill to medium high heat and rub the steak on both sides with the rub.
- Place the steak on the grill and cook for 5-6 minutes until meat is seared, flip and cook an additional 5-6 minutes until desired doneness.
- Place a piece of foil on grill and add onions, and a drizzle of olive when steak is almost done.
- When your steak is done remove and let rest. Continue cooking onions until lightly brown and soft.
