I’m all about time management. I eat breakfast while I answer emails, I brush my teeth while I put on my workout shoes.

In other words, I’m a multi-tasker who isn’t terribly efficient at getting any of my list of daily to-dos completed because my mind thinks I have to do more than six things at time.

Why? Oh why?  I might say “my poor husband”, but then I make him something as awesome as this Potato Cheese Soup, and then I say ” he can deal”

So these days, unless it’s a lazy Sunday, my to do list doesn’t always necessitate spending an hour and a half making dinner.  When I say making, I mean MAKING, not the cooking.

Enter my ugly old, scarred slow cooker

Why so ugly you ask?  Because like every other married couple my slow cooker was on my wedding registry and was a gift many moons ago.  But, no matter how many scratches or batches of soup, stews and meatballs my cooker has made it still does its job and it does it well.  Especially for a multi Tasker like me.

This Slow Cooker Light Potato Cheese Soup is the perfect family weeknight dinner, or even for serving to friends while tailgating or watching the big game.  It is made even easier to create thanks to Simply Potatoes great tasting high quality potatoes.

Super simple to prepare,  less than 10 minutes, that is it!

Using fresh never frozen Simply Potatoes that you can find your grocery refrigerated dairy section, is genius when you are short on time, but don’t want to sacrifice quality or taste.  There is no peeling of any spuds needs to be done, and your handy-dandy slow cooker does all the work, so you don’t have to!

Light Potato Cheese Soup

Ingredients

Soup:

  • 1/2 cup yellow onion chopped
  • 1 bag of Simply Potatoes diced potatoes with onion {1LB 4 oz}
  • 4 cups reduced-sodium chicken broth
  • 1/2 cup reduced-fat sour cream
  • 1/4 cup shredded extra-sharp Cheddar cheese
  • 1/4 teaspoon freshly ground pepper

Toppings:

  • 2 slices uncured bacon
  • 1/4 cup green onion white and green part chopped
  • 1/4 cup shredded extra-sharp Cheddar cheese

Instructions

Topping:

  1. Heat oil in a large saucepan over medium heat. Add bacon and cook, turning occasionally, until crisp, 4 to 5 minutes. Transfer to a paper towel to drain. Once cook, dice.

Soup:

  1. Set slow cooker to 2750° or medium heat.
  2. Add chicken stock, onion, Simply potatoes and cook 2-4 hours.
  3. When you are ready to serve, use a slotted spoon, transfer about half the potatoes to a blender and process until almost smooth, but still a little chunky.
  4. Return the mashed potatoes to the pan along with sour cream, 1/4 cup cheese and pepper. Cook, stirring, until the cheese is melted and the soup is heated through, 1 to 2 minutes.
  5. Serve garnished with crumbled bacon, the remaining 1/4 cup cheese and green onion.

    That is such a great idea! Love that you took the short cut on the potatoes, don’t know why I didn’t think of that! So trying that next time girl, this sounds so comforting right now and yeah for it being light!

      Simply Potaotes is very convienent. I just used them to make a beef stew, and cut down on the cooking time by half.

    Oh I love this! Potato soup is one of my favorites, but it can be such a pain to peel all of those potatoes! I definitely need to try this!
