Did you have a good weekend? Did the blizzard hit where you live? They predicted 10″ here in Cincinnati. How much did we really get… wait for it….a big fat zero! Here in Cincinnati snow is a big deal, they interrupt regularly scheduled programming to tell us that the snow is coming, how much, how they will be salting the roads, where they are salting the roads. They break in with a reporter standing along the side of the road showing us the road behind them that might get snow on it. You get the idea.
I made the mistake of going to the grocery store on Friday to pick up just a few things and I was met with a parking lot completely full, no carts available, and quite honestly some very rude grocery shoppers. I got my few items, and got out of there as fast as I could.
With my bag of groceries purchased I drove back to house to patiently wait for the snow and start dinner.
Salmon was on the menu for the evening, since it was only me and the hubby, I wanted to keep it simple and light. This recipe is so unbelievably simple, quick and easy for any level cook. The ingredients give you a fresh bright flavor that compliments each other. I served the salmon along with a simple salad and it made for the perfect impressive dinner.

Roasted Salmon with Clementine
Ingredients
- 1 1/2 lb skinless salmon
- 3 organic clementines 2 juiced + 1 sliced
- 1 garlic clove minced
- 1 shallot minced
- 1 teaspoon ground cumin
- 1 teaspoon cayenne pepper
- 1/2 teaspoon Sea salt
- 1/4 teaspoon ground black pepper
- 1/2 bunch cilantro chopped
Instructions
- Preheat oven to 400°.
- Place Salmon on a rimmed baking sheet.
- Sprinkle cumin, cayenne, salt and black pepper over top of salmon.
- In a small bowl combine juice from two clementines, garlic, and shallot.
- Drizzle juice over Salmon and place sliced Clementine evenly over Salmon.
- Let sit for 10 minutes and then place in oven on top rack for 15 minutes.
- Serve and Enjoy!
