 When I am trying out new recipes, I am not always sure that the end result will be blog worthy.  Most times I know early if the recipe will end up at the bottom of my trash can, long before it is complete.  Sometimes you know from the moment the first delicious smells waft past your nose that you have a real keeper, that you will be making again and again.
I knew when I was stiring in the egg whites, the batter already smelled divine.  Almondy and Chocolaty {yes I know these are not real words} a heavenly combination.  Then while baking the whole house started to smell like chocolate and I couldn’t wait for the 35 minutes to be up so I could dive into this cake.
I was in such a hurry that when I removed the cake from the oven, I popped the pan on a plate and stuck the whole thing into the fridge to hurry up the cooling process.  Yes, you can do this.  My good friend who is a pastry chef gave me this tip.  GENIUS, when you are waiting for chocolate heaven to cool.

Chocolate Almond Torte

Chocolate Almond Torte a dense, decadent chocolate cake recipe that is also gluten free. Wonderful to enjoy with a cup of coffee or tea.
Ingredients
  • 1 cup finely ground Almond Meal, or toast almonds and grind in food processor
  • 4 large eggs, separated
  • 7 ounces bittersweet chocolate chips (I used Ghiradellhi 60% cocoa)
  • 11 tablespoons unsalted butter, cut into cubes
  • 3/4 cup granulated white sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon cream of tartar
  • powdered sugar, enough to dust torte {optional}
  • fresh berries {optional}
Instructions
  1. Preheat oven to 375°.
  2. Spray a 9″ round baking pan with gluten free baking spray or grease with butter and dust with all purpose flour.
  3. In a large bowl add butter and melt in microwave, 1 minute.
  4. Remove and add chocolate return bowl to microwave and cook an additional minute.
  5. Stir chocolate butter mix to make sure chocolate is completely melted.
  6. Add granulated sugar and vanilla extract to chocolate mix and stir.
  7. Separate eggs, add yolks to chocolate mix and egg whites to a separate medium sized bowl.
  8. Add Almond Meal to chocolate mix and stir.
  9. With an electric mixer beat egg whites until peaks start to form and then add cream of tarter and mix an additional minute.
  10. Add egg whites to chocolate mix and fold whites into chocolate.
  11. Pour into prepared pan and bake 30-35 minutes. Until toothpick comes out clean.
  12. Center of cake will fall a bit.
  13. Once cake is cool, flip upside down onto a plate and sprinkle with powdered sugar and top with berries if using.
