If you are like me the holidays are all about baking. Cakes, cookies, pies you name it and I want to bake it.
Hands down holiday cookies are my favorite.
I remember as I grew up my Mom would bake almost every day for the first week of December. It was great because part of my house was turned into a bakery.
Every counter in our kitchen and our dining room table would be covered with sheets and trays of sugar cookies, wedding cookies, Buckeyes, and fudge.
Christmas Cookies make me reminisce.
Now my cookie tray is filled with all of the same cookies my Mom made, but also several others that were part of my husband’s childhood. Italian Pignoli and Anisette Italian Cookies are a few of his childhood favorites that I recreate.
Another one that his Mom would make for him and his siblings were Almond Macaroons. I recreated the classic recipe this year but made it gluten free. These are extremely simple to make.
Before I could get started I needed to make sure I had all the ingredients. I was missing Almond Paste and shockingly eggs. My chickens are on strike and have not been laying, so I needed to buy my first dozen eggs in quite some time.

I sat down at my computer the night before logged on, picked out my items. You can see what I ordered below.
Then I picked what location and time I wanted to pick up my grocery’s. I got an email confirming my order, time and location. Super Easy & Fast.
I went to bed knowing that my groceries were ordered and would be selected for me and ready to pick up.
I was actually running ahead of schedule on my errands the next day and called to ask if I could pick up in 15 minutes. They didn’t hesitate to say “of course, no problem, just call us when you get here.”
Once I arrived I pulled into a designated parking spot, called the number and literally four minutes later a very sweet lady who kept calling me darling, loaded my grocery’s right into my car for me.
It was a delightful experience and made me feel quite organized.
I ordered my groceries while sitting in bed the night before, ran a few errands, pulled into a parking spot, called a phone number and all my groceries were delivered directly to the back seat of my car.

Baking my way into the Holiday Spirit.
Once I got home from my errands, which took an hour less, cause I didn’t have to go to the store to buy my groceries, mess with check out, and if I am honest with you, I spent less because I didn’t buy anything but what I needed.
I don’t know about you but every time I go to the grocery store for three things I walk out with ten.
Not this time, so not only did I save time, but also money. I was able to make up a batch of these Gluten Free Almond Macaroons.
This is a super simple recipe. You only have six ingredients, and they take only 30 minutes to prepare. They make your whole house smell amazing and they taste even better. Chewy with just the right amount of almond flavor and sweetness.
Make ahead Christmas Cookies.
These cookies store well in a container and can last days without drying out. They are perfect to keep around during the holidays. Because they are so pretty they make a perfect gift for friends or hostess gifts.
Gluten Free Almond Macaroons
Ingredients
- 8 ounces almond paste cut into cubes
- 1 cup confectioners' sugar plus more for dusting
- 1/4 teaspoon kosher salt
- 2 large egg white
- 1/2 teaspoon pure vanilla extract
- 1/4 cup sliced almonds
Instructions
- Preheat oven to 300°F. Line a large baking sheet with parchment paper.
- Place the almond paste, confectioners sugar, and salt in the bowl of an electric mixer and mix until crumbly, about 3 minutes.
- Slowly add egg white and vanilla. Mix until smooth and thickened about 2 minutes.
- Drop batter by tablespoons onto baking sheet spacing 2 inches apart. Place 3 almond slices on each mound of dough.
- Bake until cookies are golden brown, 22 - 25 minutes. Let cool completely on a wire rack. Once cool dust cookies with confectioners sugar.
- Store any uneaten cookies covered for 3 days, longer in the refrigerator.
