Kale Apple Salad is a tangy and sweet salad that has a great balance of flavors. Topped with a vinaigrette that is loaded with the healthy clean ingredients. Â This salad is not only delicious but a nutrient dense recipe.
We had house guests a few weeks ago, friends that we have had for years that will come into town a few times a year. Â Our boys are the same age so it is always a good time to catch up and the boys have a great time… being boys. Â Let me just say lots of laundry is done when they leave. Â How do boys get so dirty?
Anyway I was throwing together a quick dinner for everyone and my girlfriend stood looking in the fridge she asked “where is your salad dressing?”  I answered with a quick “I will whip one up real quick.”  She was like “wow, isn’t that hard?”
WHAT- no making vinaigrettes is simple. Â AND so much more healthy and better for you than anything you will ever buy in a bottle or a pouch.
 This apple vinaigrette is simple to whip up and very good for you.  I added in chia seeds which have omega-3’s as well as protein.
The salad is a dynomite healthy packed recipe. Â Offering more omega-3’s, healthy fats, and antioxidants. Â So not only is this salad quick to prepare {takes 10 minutes}, but it is delicious and healthy.

- [br][b]Vinaigrette:[/b]
- 1/4 cup apple cider vinegar
- 3 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon whole-gran mustard
- 1 tablespoon sour cream
- 1 teaspoon chia seeds
- Pinch of kosher salt and black pepper
- [br][b]Salad:[/b]
- 1 -10oz. package of kale salad mix
- 2 cups sliced apple {pink lady, macintosh, gala work well}
- 1/2 cup slivered red onion {about 1/4 onion}
- 1/3 cup slivered almonds
- Whisk together all ingredients
- Combine salad mix, apples, onion and almonds. Toss with vinaigrette and serve.
Salad dressing is really easy, and my brother was surprised when there were limited choices of dressing in my fridge. He asked for an oil/vinegar dressing and I said “buddy, we can whip that up in two seconds!” I will admit, yours sounds waaaaay better, haha, and I love everything about this salad (including the apples!)
