Summer is slip, slip, slipping away. Mid July is already here! Can you believe it? Of course it feels like summer is flying by, and here in good old Cincinnati has been incredible, so I am desperately trying to spend as much time outside as I can.

I like to spend time each morning out in the garden. I have started my second round of radishes, lettuce and carrot seeds.  I love starting new lettuce because when lettuce is just about 3″ tall, it is so incredibly tender and flavorful. This round will go great with the tomatoes that are just starting to ripen.

Since my garden is all-organic, I also spend some of that morning time in the garden pulling weeds. GRRR insert grumpy face here. While I was pulling some weed vines off of the garden fence a wasp stung me. My hand is now the size of a baseball mitt. I think after keeping bees for several years, and being stung so many different times I have started to become mildly allergic. I am on Benadryl, and a bag of ice is always close by.

As you know if you follow me here on A Healthy Life For Me, I am a fan of cooking on the grill. I am always looking for new things to sizzle up on the grill and by new favorite is Bison Ribeye. Why you ask? I am so happy you asked.

Bison taste like steak but is lean like chicken and cooks almost as fast as fish. Tell me… what is not to love about all of that?

Bison is so easy to find these days. Kroger brand Simple Truth is right there along side all your other favorite cuts of meat. Simple Truth offers great natural and organic choices. I am also a huge fan of the ground Bison and enjoy using it in place of any recipe that calls for ground beef.

This recipe could not be any easier. It literally takes minutes to prepare. Unwrap your Bison Ribeye Steaks and generously salt, pepper and drizzle or brush olive oil on each side.

Do this before you start your grill.  Letting the steaks start to warm up a bit before throwing them on the hot grill will allow you to cook a more tender steak.

Big- big note here: Bison does not cook like steak. It is a quick cooker, and if you leave it on the grill too long you will dry out the meat.  Only 3-4 minutes for these 1″ steaks gave me a nice medium cooked steak. Just a bit of pink in the center.

While your grill heats up you can throw together your Avocado butter, which I highly recommend making double.  Avocado butter is great on your toast, fish, chicken you name it Avocado makes it taste better.

Grilled Bison Ribeye Steak with Avocado butter

Ingredients

  • 4 Bison Ribeye Steak
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Ground Black Pepper
  • 1 teaspoon Olive oil

Avocado Butter

  • 2 tablespoon ghee or unsalted butter at room temperature (soft)
  • 1 ripe avocado peeled and seeded
  • 1 small garlic clove minced
  • 1 teaspoon cilantro chopped
  • kosher salt to taste
  • ground black pepper to taste

Instructions

  1. Set steaks out on plate and sprinkle salt, pepper and drizzle olive oil on both sides.

    Start grill to medium high

    While grill heats mash together all of the Avocado butter ingredients and set aside. (you can use a food processor if you like)

    Place steak on hot grill.  Cook 3-4 minutes flip and cook an additional 3-4 minutes.
