Raspberry Mojito a fresh sweet cocktail to celebrate the arrival {all most} of spring.

I am a happy happy girl. You know why? Because it is going to be sunny and 67 degrees today! woo-hoo! I will be spending the day planting in the vegetable garden: lettuce, beets, peas, radishes, basil, cilantro and parsley oh-my! I will soak up every ray of sunshine and be damn happy about ever minute of it!
Now unless you live here in Cincinnati- you could not possible understand my over the top exhilaration for this weather. Let me give you a heads up… Monday it snowed… twice. Enough said!
So to celebrate the official (LATE) start of spring I offer up my Raspberry Mojito. This drink ROCKS! I love the ginger ale splash on top makes for a bit of a twist on an old standard.
I hope the weather is magnificent where you are at and that you get out and enjoy the weekend with friends and family with a Raspberry Mojito in hand!

- 3 ounce white rum
- 1/2 ounce Chambord
- Mint Leaves
- Fresh Raspberries
- 2 slices or Lime
- Splash of Ginger Ale
- In a high ball add ice, several leaves of mint and 3-4 raspberries. Smash with a large spoon in bottom of glass to release oils and juice from berries. Add rum and Chambord to glass and top off with Ginger Ale.
