Tomato Cucumber Salad with Avocado Vinaigrette is a rainbow of fresh summer produce. Â An assortment of garden fresh tomatoes, sliced cucumber, red onion, basil topped with a homemade avocado vinaigrette.
After an amazingly late summer start thanks to one of the coolest and rainiest springs we’ve had in a long time, my harvest is finally coming on.
I’m now basking in all my hard work of watering, fertilizing and weed plucking from the last few months..  Well I don’t know if I am so much basking as in stuffing my face with garden fresh tomatoes.  I mean really, is there anything better?  No chocolate does not count, that is a given.
The funny thing about this salad, is I have made it for Y-E-A-R-S! Â Not sure why I never thought to share it with you guys before.
You must forgive me now, because after you make this salad you will be kind of pissed at me for waiting for so long to share.  Cause it is so darn awesome, easy, delicious, stupid easy, and well awesome!  You can use any light fresh vinaigrette that you like, even a simple toss of red wine vinegar and olive oil works fine here.  But this avocado vinaigrette is my new favorite.
I have been throwing avocado oil on everthing lately and it is quite perfect tossed with a champagen vinegar and italian herbs.  This vinaigrette is great on all kinds of veggies, fresh or roasted and crusty bread, yumm-o!

Tomato Cucumber Salad
Ingredients
Salad:
- 2 medium tomatoes cubed {I used heirloom}
- 1 medium cucumber trimmed, halved and sliced thin
- 1/4 cup of diced red onion
- 2-3 basil leaves torn into pieces
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Avocado Vinaigrette:
- 6 tablespoon avocado oil
- 3 tablespoon champagne vinegar
- 1 garlic clove minced
- 1 teaspoon italin seasoning mix
- pinch of kosher salt
- pinch of ground black pepper
Instructions
Salad:
- Toss ingredients together in serving bowl. Set Aside
Avocado Vinaigrette:
- Place all ingredients in a bowl in whisk or place in mason jar and shake to blend.
- Pour about 1/4 of dressing on salad and toss.
- Taste and add dressing to taste.

I love cucumber salad! This recipe is perfect because I have a bunch of fresh tomatoes and cucumbers in my garden.
I just filled my counter again with tomatoes and cucumbers, all the rain means I have an abundance this year, and this salad is the perfect way to use them up.
